Shaved Brussel Sprout Salad

Ingredients

1 lb. Brussel Sprouts

1 large Honeycrisp apple, diced into small cubes

1 thin-sliced shallot

4 tbsp cup toasted pine nuts

1 oz. shaved pecorino

3 tbsp. Cranberry Pear Balsamic vinegar

¼ cup Rosemary Olive oil
-
1 tbsp honey

Smoked sea salt
Directions
In a large bowl, whisk together the balsamic vinegar, olive oil, and honey until thoroughly combined.
Place in the rest of the ingredients in the bowl except the Pecorino. Toss to coat with the vinaigrette. Fold in the cheese, and sprinkle salt on top to taste.
