We found that these four toasted ‘c’s of the spice world, coriander, cumin, caraway and canela (Mexican cinnamon), work together harmoniously as our favorite 4-spice blend.

1934 Spice is perfect in dishes including Grilled Pork Mole Rojo, both as a marinade and to sauté greens with, infusing the dish with savory, warming notes.

CAMPO RECIPE - PRESERVED LEMONS

  • 6 lemons, sliced into rounds
  • 1/4 C 1934 Spice
  • 1/8 C kosher salt
  • 1/8 C sugar
  • 1/2 C lemon juice
  • Olive oil

In a canning jar, toss the lemons with 1934 Spice, sugar and salt. Add the lemon juice. Cover and keep in a warm place for 7 days, shaking once a day. Cover with oil and store in refrigerator for up to six months. Use in dressings, salads, stews and cheese plates. Or thinly slice and use as a garnish on rich, spicy dishes.
