We love Provence and this delightful olive oil is a prime example of the delicate, fruity huile the region produces. This award-winning extra-virgin olive oil is the result of blending the four local olive varieties traditionally grown in the AOP Vallée des Baux de Provence. Cold extraction at Castelas Mill within 6 hours of harvesting retains the vegetal, fruity character of the olive oil and preserves the subtle and complex features of Domaine CastelaS.
You'll find a very fresh nose with an aromatic persistence unveiling an attractive palette of flavors: raw artichoke, almond, apple, and tomato plant. It is subtly bitter, with a peppery edge that blossoms after several seconds in the mouth.
Castelines, CastelaS's Classic, is a delicate, complex, and harmonious olive oil that is best drizzled directly on food. It expresses itself equally well on warm dishes such as steamed vegetables, fish, and fresh pasta, and on green salads, raw vegetables, and cheese.
Domaine CastelaS produces olives on 110 acres of Appellation d’Origine Protégée groves in the Vallée des Baux de Provence, and in 160 acres on the Plaine de Crau.
In this mill, at the foot of the Château des Baux, Catherine and Jean-Benoît combine know-how, passion, exacting standards, technique, and their olive farmers’ sensibility to create intensely powerful olive oils year after year, for pleasure constantly renewed. After living for 15 years on the wide-open plains of Arizona, Catherine and Jean-Benoît Hugues decided to return home to their roots in Provence to dedicate themselves to their passion: the olive tree. The Domain Castelas’ story began in 1997 when they fell in love with some old olive trees planted in south-facing land in the rocky range of Les Alpilles, in the locality of Castelas. Today Domaine Castelas produces olives on 110 acres of Appellation d’Origine Protégée (AOP) groves in the Vallée des Baux de Provence and in 160 acres on the Plaine de Crau. At their mill located at the foot of the Château des Baux, Catherine and Jean-Benoît combine know-how, passion, high standards, technique, and all of their olive farmers’ sensibility, to create intensely powerful olive oils year after year.
